Whiskies from Jura, Mull, Skye and Orkney –to
anyone who thinks that all malt whisky tastes the same, the Island
drams are a perfect answer. The most northerly distilleries on
Orkney have a smoky flavour imbued in them from the heather-covered
Orkney peat moss which is burnt in the kilns. Talisker from Skye
is a giant amongst malts and perhaps one of the most recognizable
–an explosive effect on the palate and a wonderful, peaty
sweetness on the nose. Highland Park and Scapa from Orkney have
a traditional style –both silky in texture.
